“…A similar finding was observed by Qin et al (2016) that the decrease in α‐helix with an increase in β‐sheets results in a better gel network. The increase in β‐sheets alters the protein interactions by exposing hydrophobic sites in protein aggregates, enhancing the viscoelastic properties (Wang et al, 2011).
