Aging properties and hydrophilicity of maize starch plasticized by hyperbranched poly(citrate glyceride)

Abstract: Hyperbranched poly(citrate glyceride)s (HBPETs) as plasticizers were mixed with maize starch (S) via cooking and film formation.
