Abstract:Agri-food waste represents a cheap raw material for the obtention of plant extracts with high antioxidant potential. Herein, we will discuss the role of oxidative stress in human health and the potential of plant extracts derived from agri-food waste in redox balance and, consequently, in disorders related to oxidative stress (metabolic syndrome, cancer, neurodegenerative diseases, etc.).
