enriched with sesame seeds and linseed; 3 Nuggets -the flour base of chickpeas, enriched with sesame seeds and linseed, Nuggets 4 -the basis of flour of eggplant, enriched with sesame seeds and linseed. Through the results obtained, it was possible to observe that the nuggets 1, 3 and 4 were better accepted by the evaluators. Being that 74% of the evaluators rated the nuggets 1 as "extremely", 18 and 27% of the respondents evaluated the nuggets 3 and 4 as "moderately". Only the nuggets 2 presented low acceptance, being classified by most as "not liked, nor disgusted". The results of purchase intention show that the product 1 had better evaluation, being classified as "certainly buy" for 74% of the evaluators. The other nuggets had lower acceptance, being that 24% of interviewed said they would buy very rarely the nuggets 2. It appears that the process of nutritional transition interfered significantly in feeding the population, and the preference for industrialized foods is still majority in the palate of people, which contributes to the increase of obesity and other chronic non-communicable diseases.
