In brief, defatted shrimp heads were homogenized and allowed to react in a pH-adjusted (pH = 3.0) pepsin-containing aqueous solution (2500 U/g, m/m = 1:10) for 4 h. Then, the pH was adjusted to 8.0 under optimal trypsin conditions (2500 U/g) in a reaction system for 4 h. The solution was heated to inactivate the enzyme, and the supernatant was collected (CF16RN high-speed microcentrifuge, Himac, Tokyo, Japan), filtered through a microfilter (0.22 μm), and ultrafiltered using a 1 kDa membrane.…”
