Abstract: This study aimed to analyze the amino acid profile, with a particular focus on the nutritional value of the protein of the longissimus lumborum (LL) and the semimembranosus (SM) muscles of deer originating from three feeding grounds: forest (FFG); conventional (CFG) grounds; organic farm (OFG).
