An Artificial Intelligence Approach Toward Food Spoilage Detection and Analysis

Abstract: Aiming to increase the shelf life of food, researchers are moving toward new methodologies to maintain the quality of food as food grains are susceptible to spoilage due to precipitation, humidity, temperature, and a variety of other influences. As a result, efficient food spoilage tracking schemes are required to sustain food quality levels. We have designed a prototype to track food quality and to manage storage systems at home. Initially, we have employed a Convolutional Neural Network (CNN) model to detect… Show more

“…Moisture content is a critical parameter that affects the stability, shelf life, and processing characteristics of a material. Microorganisms such as bacteria and fungi require moisture to thrive [32]. The low moisture content in OPP (3.4%) ensures conditions less favorable to microbial growth.…”

“…Spoilage is characterized by any unacceptable change in food's sensory properties. 11 The process of food spoilage technically involves various factors like composition of food, its water activity, its sensitivity to temperature and sunlight, 12,13 but microbial growth is the top contributor of health concerns. 14 Combinations of any trigger points of spoilage lead to growth of microbes and they release chemical substances into head space called analytes which can be toxins, mycotoxins, chemical residues, and gases.…”

“…Food waste can be significantly reduced by using AI to match food donors with organisations that distribute food to the most vulnerable people affected by food insecurity. AI can help ensure that food donations are distributed to the areas most needed and in the right quantities, thereby reducing food waste [103].…”
