Abstract:Esta investigación tuvo como objetivo realizar un análisis química proximal y sensorial de una compota a base de tocosh de oca (Oxalis tuberosa Mol), quinua (Chenopodium quinoa), mashua (Tropaeolum tuberosum) y guanabana (Annona muricata).
