Abstract:This study aimed to analyze the antioxidant capacity and polyphenol content of the hard seltzer drink made with Tommy Atkins mangoes collected in the Santa Lucia canton of the Guayas-Ecuador province. To measure the antioxidant capacity and the concentration of polyphenols, the Ferric Reducing Antioxidant Power (FRAP) method and the Folin-Ciocalteu reagent were obtained, respectively.
