Abstract:Background. When choosing foods rich in carbohydrates, it is important to consider not only their chemical composition, but also the ability to influence the level of postprandial blood glucose (glycemic response). A qualitative indicator of this ability is the glycemic index (GI) of a carbohydrate-containing product.
