Analysis of the effect of different withering methods on tea quality based on transcriptomics and metabolomics

Xiaoli Jia,
Qi Zhang,
Meihui Chen
et al.

Abstract: Withering is very important to the quality of Wuyi rock tea. In this study, transcriptomics and metabolomics were used to analyze the effects of different withering methods on tea quality formation. The results showed that sunlight withering (SW) was most beneficial in increasing the gene expression of ubiquinone and other terpenoid-quinone biosynthesis (ko00130), pyruvate metabolism (ko00620), starch and sucrose metabolism (ko00500), and tryptophan metabolism (ko00380) pathways, and increasing the content of … Show more

“…The content of flavonoids and soluble sugars was determined by aluminum trichloride colorimetry and anthrone colorimetry, respectively . At the same time, tea taste was converted according to the content of different quality indexes obtained from the determination with reference to the taste characteristics of each substance (Table S1) (Jia et al, 2023).…”

“…IBM SPSS Statistics 21.0 software was used for data T-text and correlation analysis. R version 4.2.3 software was used to produce box plots (R libraries was gghalves version 0.1.4), principal component analysis (PCA, R libraries was ggbiplot version 0.55), heat plots (R libraries was pheatmap 1.0.12), volcano plot analysis (R libraries was ggplot2 version 3.4.0), orthogonal partial least squares discriminant analysis (OPLS-DA, package used for this was ropls and mixOmics) ( Jia et al., 2023 ), redundancy analysis (RDA, R libraries was vegan version 2.6.4) and correlation matrix analysis (R libraries was linkET 0.0.7.1) ( Watkins, 2020 ). The entropy weight TOPSIS statistical analysis was performed on the SPSSAU online platform ( https://spssau.com/ ) ( Çelikbilek and Tüysüz, 2020 ).…”

“…Based on this, the OPLS-DA model was further constructed in this study ( Zhang et al., 2023c ). After the goodness-of-fit and predictability of the model were assessed to be qualified, key microorganisms were screened by the important projected value (VIP value) of the model indexes ( Jia et al., 2023b ; Zhang et al., 2023b ). In addition, XGBoost machine deep learning was applied to model construction to obtain the importance of key microorganisms in distinguishing different samples ( Chen et al., 2020 ; Khan et al., 2020 ).…”
