Analysis of the Microbiota on Lettuce (Lactuca sativa L.) Cultivated in South Korea to Identify Foodborne Pathogens

Abstract: Lettuce (Lactuca sativa L.) is a major ingredient used in many food recipes in South Korea. Lettuce samples were collected during their maximum production period between April and July in order to investigate the microbiota of lettuce during different seasons. 16S rRNA gene-based sequencing was conducted using Illumina MiSeq, and real-time PCR was performed for quantification. The number of total bacterial was greater in lettuce collected in July than in that collected in April, albeit with reduced diversity. … Show more

“…Proteobacteria , particularly Gammaproteobacteria , was the dominant phylum of isolated endophytes, consistent with the root and leaf microbial communities of a congeneric plant species, Lactuca sativa 39 , 40 . One species of the Gammaproteobacteria , K. cowanii , was detected in all L. serriola populations.…”

“…Serratia and Pantoea are primary spoilage bacteria in meat and meat products during aerobic storage [ 65 , 66 ]. Therefore, Proteus can be used as a basis for biomarker research to find harmful bacteria [ 67 ]. P. unclassified was negatively correlated with 23 species and consistent with these observations.…”

“…All metropolitan regions had positive samples for Salmonella spp., revealing its wide geographic distribution. The presence of S. aureus in the studied samples suggests danger to the population, since Yu et al (2018) classifies it as one of the main pathogens causing food pathologies, with emphasis on intoxications. This microorganism proves to be an excellent indicator of manipulation of objects and food, because it is part of the microbiota of the skin and mucosa of the human being (Brooks et al, 2014).…”
