Anaphylaxie

Abstract: Anaphylaxis is an acute systemic hypersensitivity reaction with symptoms of immediate-type allergy, which involves particularly the skin, respiratory tract, cardiovascular system and gastrointestinal tract. The severity of anaphylactic reactions is variable but some are fatal. Hymenoptera venom anaphylaxis affects about 3% and food hypersensitivity 2.6-3.2% of the general population; drugs are the other frequent cause. Symptoms of anaphylaxis are characteristic, but none of them is obligatory--even urticaria i… Show more

“…Asthmatic reactions have been attributed to reflex activation of the parasympathetic system by the irritating effect of sulfites, possibly enhanced by a deficiency of sulfite oxidase. Besides this pseudoallergic mechanism, in at least some cases of sulfite hypersensitity, an immunoglobulin E (IgE)-mediated immediatetype allergic reaction must be considered (95). Sulfites may be contained in wine, but they are also contained in foods that are poor in histamine, such as fruit juice, frozen vegetables, and lettuce.…”

“…Systemic anaphylaxis is generally recognized as a severe allergic reaction caused by IgE-mediated activation of mast cells, leading to a massive release of vasoactive mediators that induce acute hypotension and shock. The worst manifestations are cardiovascular collapse, bronchospasm and laryngeal oedema [3,4]. The diagnosis of anaphylaxis is based primarily on clinical criteria and is valid even if the results of laboratory tests, such as serum total tryptase levels [5], are within normal limits.…”

“…Sodium metabisulfite (Na 2 S 2 O 5 ) is commonly used as a preservative in a variety of food products, wine, and drugs due to its antimicrobial and antioxidant properties [1]. In the process of wine production, it can inhibit the growth of bacteria, control the activities of fermentation microorganisms, and delay the start time of fermentation.…”
