“…According to Brown (2005) potatoes should be considered as vegetables that may have a high antioxidant capacity dependent on their flesh composition. Purple flesh potatoes contain anthocyanins (Fossen et al 2003); they have their tuber flesh coloured totally or only partially and they contain 69-350 mg anthocyanins/kg fresh matter or 55-171 mg/kg fresh matter, respectively (Brown et al 2003).
