Anthocyanins from Aronia melanocarpa Bound to Amylopectin Nanoparticles: Tissue Distribution and In Vivo Oxidative Damage Protection

Abstract: The in vivo applications of anthocyanins are limited by their instability. Nano-encapsulation using amylopectin nanoparticles (APNPs) stabilizes anthocyanins to deliver them to tissues to ameliorate their physiological functions.
