Antimicrobial Cocktail Combining Specific Peptide Extracts from Native Probiotic Bacteria Hamper Adulteration of Ready-to-Eat Mango Wedges

Abstract: Consumption of ready-to-eat chopped fruits sold in the streets is a concern, as such activities are outside the regulation and protection in most developing countries. Ready-to-eat mangos are commonly sold as wedges in plastic cups at ambient temperature by mobile vendors in Ecuador, thus they are prone to contamination by bacteria, which poses a safety issue of concern. This work aimed to evaluate the effect of several antimicrobial cocktails consisting of previously designed specific peptide extract combinat… Show more

“…The microbiological quality was performed as previously described [40]. Briefly, 25 g of chopped fruits, randomly collected from the initial 500 g of field fruits or fruits purchased from low-cost marketplace, were placed in a zip bag containing buffered peptone water (0.1%) and mixed vigorously by hand for the 30 s. Moreover, the liquid was poured in a centrifuge bottle and incubated at 37 • C for 4 h. Similarly, 25 mL of each juice sample was used.…”

“…This decrease may be related to the pandemic disease of the coronavirus, as street sales were blocked. Nonetheless, in most cities, the lack of an appropriate structure in the retail markets might be the main cause of the contamination; however, the products failed to reach the required quality [ 3 ]. In addition, the use of beneficial microorganisms such as probiotics in foods that contain antimicrobial substances is very limited in the Ecuadorian market.…”
