Antioxidant Activity and General Fruit Characteristics in Different Ecotypes of Corbarini Small Tomatoes

Abstract: Sixteen ecotypes of Corbarini small tomatoes were studied. The antioxidant activity was evaluated with the DMPD (N, N-dimethyl-p-phenylenediamine) method in the water-soluble fraction (S-AA) and with the ABTS [2, 2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid)] method in the water-insoluble fraction (I-AA). S-AA and I-AA were strongly related to each other, varying to a large extent between the ecotypes considered. They were also significantly correlated with fruit weight, total solids, and refractive inde… Show more

“…Evaluation of AA is becoming increasingly relevant in the field of nutrition as it provides useful information with regard to health promoting and functional quality of raw materials whether they are fruits, vegetables, or medicinal plants (Scalfi et al (2000). This parameter accounts for the presence of efficient oxygen radical scavengers, such as phenolic compounds.…”

“…Antioxidants prevent the accumulation of potentially damaging reactive oxygen species (ROS), which occur as [26]. Impacts of storage treatments on the antioxidative properties and products of tomato are of concern because tomato fruit is recognized to be particularly rich in several antioxidants such as Vitamin C, carotenoids (especially lycopene), Vitamin A plus some flavonoids and other phenolic compounds, and it protects the human body tissue against oxidative attacks [27,28]. It has long been recognized that naturally occurring substances in higher plants have antioxidant activity.…”

“…However, the lycopene content of tomato products is highly variable, being affected by factors such as variety (Hart & Scott, 1995;Abushita et al, 2000), ripeness (Fraser et al, 1994), climate and geographical site of production (Scalfi et al, 2000) and processing (Tonucci et al, 1995;Shi & Le Maguer, 2000;Re et al, 2002).
