“…The scavenging rate of undiluted hydrolyzate on hydroxyl radicals was 55.45%, which was equal to the VC solution at 1.0 mg mL −1 . Combined with other study (Liu et al, 2012), it can be concluded that the source of scavenging ability of the hydrolyzate on hydroxyl radicals was from the polysaccharide content of the cucumber.
