Application of an environmentally friendly preventive measure for the preservation of fresh vegetables

Abstract: Vegetables are an important source of vitamins and minerals and are one of the most perishable products. Fresh vegetables need to be cleaned, sorted, washed and dried before entering distribution and trading systems. The quality of the product and the effect of the environment during preparation are very important. One method of stabilizing vegetable quality is the application of ozone, which is a strong disinfectant used to inactivate microorganisms. Ozone, when in contact with a product surface, does not lea… Show more

“…Banana is a plant that is typically consumed as fresh fruit and popular across the world especially Southeast Asia [21]. Peels and pith of banana is a non-food waste material that can easily obtained and are the most discarded fruit wastes that can be found in Malaysia [22]. The total yield of banana production in Malaysian showed an upward trend of increase from 2007 to 2012 which results in 806 337.6 tonnes of banana biomass discarded in 2012 [23].…”

“…Ozone is well-known for its ability to readily decompose to oxygen in the air, and on contact with the product, residues are minimal or they dissipate and there is no need to remove the resulting gas [ 11 ]. Ozone is an environmentally friendly, cost-effective and Generally Recognised as Safe (GRAS) food processing technology that kills 99% of microorganisms and is used instead of heat treatment as it does not require heat energy [ 11 , 12 , 13 ]. Thus, the ozone treatment of products can improve the economic benefits, microbiological safety and shelf life of quality food products.…”

“…Various natural bioactive compounds have been identified in fruit extract of Phoenix dactylifera, i.e., luteolin, protocatechuic acid, quercetin, gallic acid, resorcinol, chelidonic acid, and chlorogenic acid [31]. The antioxidant potential of Phoenix dactylifera is possible due to the occurrence of phenolics, melatonin, carotenoids, and vitamins contents, e.g., p-coumaric acid [32].…”
