Application of high‐pressure homogenization to tailor the functionalities of native wheat starch

Abstract: BACKGROUND The effect of high‐pressure homogenization (HPH) on the rheological and thermal properties, water retention capacity (WRC), morphology and in vitro digestion of wheat starch was evaluated.
