Application of Mid-infrared Spectroscopy for the Measurement of Several Quality Parameters of Alcoholic Beverages, Wine and Raki

Abstract: Mid-infrared (IR) spectroscopy, which is a rapid and relatively small amount of waste producing technique, was used to predict several quality parameters of two types of alcoholic beverages, wine and raki. Mid-infrared spectra of red, rose and white wines and a traditional aniseed alcoholic beverage, raki were collected and relations were established between measured chemical parameters (pH, brix, total phenol content, anthocyanin content, titratable acidity, sugar content, electrical conductivity and some col… Show more

“…PLS analysis was performed by relating FT-MIR spectral data as X variables and chemical components contents obtained with analytical methods as Y variables (Ozturk et al, 2012). As shown in Table 3, the correlation coefficients of calibration (R 2 (cal)), root mean square error of cross-validation (RMSECV (%)) and the residual predictive deviation (RPD) were of 0.95, 4.60 and 9.48 for ethanol and 0.93, 4.65 and 6.54 for total acid, respectively.…”

“…The detailed calculations of these indices can be referenced to Ozturk et al 18 Additionally, residual predictive deviation (RPD), which is dened as the ratio of standard deviation (SD) of the prediction set to the RMSEP, 19,20 was also used in this study to standardize the predictive accuracy. Correlation coefficient of the calibration set (R 2 (cal)) and the root mean square error of cross-validation (RMSECV) were used to evaluate the model t to the data in the calibration set.…”

“…Even in the latest review article [4] conductivity of wine is mentioned only once with the reference on the paper from 2004 [3]. We were able to find only one other paper dealing with the conductivity of wine, but even they report it only for spirit drink and not wine, and concluding FTIR data did not provide a good prediction for electrical conductivity [5].…”
