Application of UV-C Radiation in the Conservation of Minimally Processed Rocket (Eruca sativa Mill.)

Abstract: The effects of UV-C pretreatments (10, 20 and 30 kJ/m 2 ), compared with modified atmosphere packaging (MAP), on sensory change, microbial and bioactive profile of minimally processed rocket leaves throughout 12 days at 5C were investigated. Nonirradiated samples were used as controls. All UV-C treatments reduced the natural microflora growth. In relation to sensory quality, all treatments resulted in a shelf life of 8 days. Total antioxidant activity and total phenol content decreased after 8 days for all tre… Show more

“…The antioxidant activity (TAA) was evaluated through a colorimetric method based on the free radical scavenging capacity of the sample evaluated with the 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) stable radical (Sigma‐Aldrich, Saint Louis, MO) according to the methodology proposed by Gutiérrez et al . (). The calibration curve was obtained using Trolox (Sigma‐Aldrich, Saint Louis, MO) as a standard, and the results were expressed as Trolox equivalents (μg TEq mL −1 ).…”

“…Both chlorophyll and carotenoids were extracted in accordance with Gutiérrez et al [29]. To perform the chemical determinations, samples (10 g) of each treatment per replicate were frozen at-80°C and stored until the measurements were taken on the different days of evaluation.…”

“…The phenolic compounds were extracted according to the procedure described by Gutiérrez et al [29]. The 4g frozen rocket samples were homogenized with 20mL of methanol and centrifuged at 6,000 x g at 4°C for 15 min being the supernatant used as an extract of each sample.…”

“…En términos generales los equipos utilizados para el tratamiento de hortalizas con radiación UV-C consisten en una cámara de acero inoxidable con paredes reflectantes que varían sus dimensiones según la cantidad de producto que se desee tratar (Artés-Hernández et al, 2010;Martínez-Hernández et al, 2013;Gutiérrez et al, 2015).…”
