Abstract: Deoxynivalenol (DON) is a foodborne mycotoxin produced by Fusarium molds that commonly infect cereal grains. It is a potent protein synthesis inhibitor that can significantly impact humans’ gastrointestinal, immune, and nervous systems and can alter the microbiome landscape.
