Abstract:In the present investigation to determine the suitability of mango varieties for Jam preparation, five Malda grown mango varieties namely, Himsagar, Lakshmanbhog, Amrapali, Fazli and Kishanbhog were utilized along with assessment of storage behavior of the end product.
