The effects of culinary practices such as boiling, frying, and grilling on the proximate compositions and concentrations of metals (Cd, Pb, Cr, Zn, Fe, Cu, Mn, Ni, and Hg) in commonly consumed fish species from the Nigerian coastal waters were investigated. The selected fish species were Polydactylus quadratifilis, Chrysicthys nigrodigitatus and Cynoglossus senegalensis. The culinary practices lead to increased protein, fat, and ash contents and decreased moisture contents of these fish species. The culinary practices resulted significant increase in the concentrations of most of the studied metals and decrease in the concentrations of Fe, Cr, and Pb in some fish types. The concentrations and estimated dietary intakes of Cd, Pb, Cr, Zn, Fe, Cu, Mn, Ni, and Hg from consumption of the processed fish were within their statutory safe limits. The individual metal target hazard quotient (THQ) values and the total THQs were less than 1 which indicates that no health risks would arise from the long-term consumption of these fish species.

Background: Burullus Lake has received a great attention because of its environmental and economic importance for being a significant source of fish production in Egypt. It is subjected to many of environmental changes due to the huge amount of discharges originated from different sources as well as many human activities. The Nile tilapia (Oreochromis niloticus) is an abundant sedentary fish present in the most Egyptian lakes, Nile River, and ponds. The study was designed to evaluate some metal pollution in Burullus Lake. Results: The values of heavy metals (Mn, Zn, Fe, Ni, Cu, and Pb) were measured in lake water and muscles of O. niloticus fish during winter and summer 2014. Water samples were collected from six sampling sites, while fish samples were collected from the three sectors (eastern, middle, and western) of the lake. The mean values of heavy metals (Mn, Zn, Fe, Ni, Cu, and Pb) in surface water of Burullus Lake during winter and summer for the year 2014 were 1.09, 10.50, 29.38, 6.87, 2.05, and 5.98 μg/L, respectively, whereas the annual means of heavy metals (Mn, Zn, Fe, Ni, Cu, and Pb) in the muscles of O. niloticus fish were 0.68, 4.70, 10.62, 0.52, 0.39, and 0.46 μg/g wet wt., respectively. Conclusions: In lake water, Mn was the lowest concentration of the six sampling sites, while Fe was the highest concentration, whereas in fish muscles, Cu recorded the lowest concentration of the three sectors, while Fe was the highest concentration. The southern part of Burullus Lake had the highest heavy metal values as it influenced by the discharge of massive amounts of domestic sewage as well as agricultural and industrial effluents. The accumulation of heavy metals in fish muscles of the three sectors showed different patterns. Generally, the values of metals in the fish muscles were accepted by the international legislation limits and are safe for human consumption.

In this study, fresh fish (Otolithes ruber, Saurida tumbil, Pseudorhombus malayanus, Acanthopagrus latus, Hypophthalmichthys molitrix and Tenualosa ilisha), imported frozen fish (Megalaspis cordyla, Ctenopharyngodon idella, Labeo rohita and Acanthopagrus latus) and imported canned fish species (sardines, mackerel and tuna) were used to detect and determine some toxic trace elements. All fish samples contained trace elements. The total concentrations mean for Cu, Zn, Pb, Ni, Co, Cd and Mn were between (1.0.23-3.00) and (0.11-1.86) mg/kg dry weight respectively in muscles of fresh fish, and between (13.50-3.53) and (0.13-4.50)mg/kg dry weight respectively in the muscles of frozen fish species, and between(21.75-56.30), (5.21-82.84), (0.25-1.51), (0.33-1.96), (0.20-0.47), (0.51-2.22) and (0.13-0.81) mg/kg dry weight respectively in canned fish .Concentrations average of some trace elements were exceeded the permitted legal limits that set by the Food and Agriculture Organization and the World Health Organization.
