Abstract: O pescado é considerado uma excelente fonte proteica com alto valor nutritivo, por outro lado, possui alta perecibilidade, sendo necessária condições sanitárias ideais em todo o processo produtivo a fim de que seja oferecido ao consumidor um produto seguro e de boa qualidade.
