“…Its loss in relation to the fresh fruit was described by Damiani et al (2011), which could be attributed to differences in the quality of the raw-material because the fruits were harvested from their own crops and thus they could be at different maturation stages, in addition to the time spent between processing and freezing (CIABOTTI; BRAGA; MATA, 2000) and the incorporation of air during the processing steps favoring aerobic degradation reactions by oxidation (LIMA; MÉLO;LIMA, 2000) or even the thermal degradation during blanching and pasteurization (MAIA et al, 2007).…”

“…Currently, the orange produced for industry is three times bigger than for in natura consumption (Agrianual, 1999). In search for greater practicality, the consumer market has shown growing interest in products `ready to consume´ (Lima et al, 2000). According to Pupin et al (1998), the internal retail market for orange juice in Brazil is based mainly on the trade of the natural product, refrigerated and packed in plastic bottles.…”

“…Entre 2005 e 2010, o consumo de sucos concentrados, de preparados sólidos para refresco e de sucos e néctares prontos para o consumo aumentaram 0,5, 1,9, e 10,6%, respectivamente.
