Bioactive compounds in meat and their importance in human nutrition

Abstract: Wprowadzenie i cel pracy. Show more

“…Eating meat can have both a positive and negative effect on human health. Meat is a rich source of energy and nutrients, such as proteins, microelements, vitamins, and bioactive substances, like L-carnitine, creatine, carnosine, anserine, taurine, conjugated linoleic acid, α-lipoic acid, coenzyme Q10, γ-aminobutyric acid, glutathione, and bioactive peptides [ 48 ]. However, it also contains saturated fat and cholesterol [ 49 ].…”

“…These substances are typically found in higher concentrations in offal than in muscle meat [ 15 , 166 ]. The array of biologically active compounds present in offal offers multiple health benefits, such as antioxidant, anticancer, antihypertensive, anti-inflammatory, anticoagulant, cytomodulatory, and immunomodulatory effects, as well as boosting metabolism, enhancing digestion, and contributing to the reduction in blood glucose levels [ 4 , 18 , 32 , 167 , 168 ].…”

“…The presence and concentration of these bioactive substances in meat and offal are influenced by various factors, including the species and breed of the animals, their feeding system, and the subsequent processing of the raw material [ 168 , 178 ]. Unfortunately, the available literature lacks information on the content of these substances in offal.…”

“…Indeed, meat consumption is widely accepted by consumers because meat is tasty. Additionally, it may be considered that meat is an important source of pro-health compounds [ 15 ], which are difficult to obtain in sufficient amounts from other sources [ 16 ]. Furthermore, meat is an excellent matrix for the introduction of different bioactive compounds to design functional foods [ 17 , 18 ].…”
