“…These are all combined with an increasingly evident and impactful climate change scenario that is irreparably modifying some agricultural practices. The search for practices that favor and use local varieties of raw materials more suited to the climate in which they are grown, as ancient grains often are, is undoubtedly a possible risk mitigation strategy (Jacob et al , 2021). Difficulties in the use of water, finding genetic varieties created in distant countries and the lack of sufficient quantities of local or national raw materials are increasingly pushing the realities of the agrifood sector to rethink their production models and medium- to long-term strategies (Blicharska et al , 2019).…”

“…Through the different case studies, a systems thinking perspective and a holistic viewpoint have been used to understand the relationships, roles, motivations and dynamics underlying the close but often not so understandable relationship between business and the ecosystem (Davila et al , 2021). The protection of biodiversity and its management represent a current challenge for any type of business activity, a situation that has been made even more urgent based on the dynamics of today’s world and the consequences that the current and more widespread relationship with nature is bringing (Blicharska et al , 2019; Feger and Mermet, 2022; Jacob et al , 2021) (Figure 1).…”

“…Nowadays, we have the opportunity to address several global challenges related to nutrition by diversifying diets. Some of these challenges include meeting high per capita demand for nutrient-rich foods ( 5 ), fostering resilience to climate change and to the emergence of new zoonotic outbreaks, and promoting stability in food supply within the food system ( 6 ). One of the most comprehensive reviews to date examining the role of biodiversity in sustainable development highlights that biological diversity can directly contribute to (i) increased food and nutrition security levels due to a rise in local food consumption; (ii) reduced poverty because local consumption generates a source of income for local farmers; (iii) improved health and wellbeing due to higher access to more nutritious foods; and (iv) increased ability to mitigate climate change by considering as food those species adapted to local ecosystems ( 1 ).…”

“…Biodiverse foods refer to the diversity of edible resources of plants, algae, fungi, animals, and their products in a food system (FAO 2017). Food biodiversity is strategic to help us overcome nutritional gaps in current dietary patterns and support us in transitioning to more sustainable diets (Jacob et al 2021). However, we have a technical limit: Until recently, food consumption studies have addressed local culture and environmental conditions narrowly, thus providing, inaccurate data on local food biodiversity (Burlingame et al 2009).…”
