Bioprospecting of strains of Streptococcus thermophilus from Indian fermented milk products for folate production

Abstract: This study deals with the bio-prospecting of folate producing strains of Streptococcus thermophilus isolated from milk and different fermented milk products of Indian origin. From a total of 500 randomly selected colonies isolated from 209 different samples, 117 isolates were identified as S. thermophilus by classical biochemical and molecular characterization. Frequency of incidence of S. thermophilus in the different samples of milk and milk products was variable with the highest in the dahi followed by yogu… Show more

“…The lacS gene is organised in an operon with the β-galactosidase-encoding gene, lacZ , similar to the system in Lactobacillus delbrueckii (Schroeder et al 1991 ). The lacZ gene in S. thermophilus is well conserved and has been used for PCR-based identification purposes of S. thermophilus from fermented dairy products (Lick et al 1996 ) and for the isolation of folate-producing S. thermophilus strains from Indian fermented milk products (Iyer et al 2011 ).…”

“…2 In bacteria, there are two types of synthesized folate, namely intracellular and extracellular folate. Intracellular folate is mostly present in the form of pteroilpentaglutamate (5 glutamate residues), whereas extracellular folate tends to be in 21,32,37 Based on its variations, natural folate has different stability. The stability order is 5-FTHF> 5-MTHF> THF, studied during fruit and vegetable processing.…”

“…Yogurt is commonly produced using two specific types of lactic acid bacteria (LAB), Lactobacillus delbrueckii ssp. bulgaricus and Streptococcus thermophilus (Lb-St) (Regazzo et al 2010; Iyer et al 2011; Ng et al 2011). These bacteria have a strong and efficient symbiosis, as demonstrated by the rapid growth of both bacteria and production of new molecular structures.…”
