Cadmium Exposure in Aquatic Products and Health Risk Classification Assessment in Residents of Zhejiang, China

Yue He,
Hangyan Fang,
Xiaodong Pan
et al.

Abstract: Cadmium (Cd) pollution of food safety is a prominent food safety concern worldwide. The concentration of Cd in six aquatic food categories collected from 2018 to 2022 was analyzed using inductively coupled plasma mass spectrometry, and the Cd exposure levels were calculated by combining the Cd concentration and food consumption data of 18913 urban and rural residents in Zhejiang Province in 2015–2016. The mean Cd concentration was 0.699 mg/kg and the mean Cd exposure of aquatic foods was 0.00951 mg/kg BW/month… Show more

“…Rapid industrialization in recent years has led to increases in the use of Cd 2+ . Cadmium-containing pollutants in the aquatic environment are becoming increasingly common, exacerbating Cd 2+ contamination of aquatic products. To regulate the market and ensure the safety of food for humans, the World Health Organization set a standard of limited detection amount of Cd 2+ in drinking water as 0.003 mg L –1 and the Chinese government has established a maximum residue limit for Cd 2+ in food (0.0001 mg L –1 for aquatic products). , However, Cd 2+ overload in aquatic products is still common. Food has been reported to be one of the major sources of Cd 2+ exposure. Cd 2+ were detected in seaweeds, crustaceans, shellfish, and cephalopods .…”

“…However, fish, which inhabit high tropic levels in the aquatic ecosystems, have the ability to accumulate heavy metals from the living environment (such as the surrounding water and sediments), along with the process of bio-magnification in the food chain (Banerjee et al, 2015;Fang et al, 2019). Various studies have shown that the consumption of contaminated-fish is one of the major pathways for humans exposure to heavy metals (Saha et al, 2016;He et al, 2023). Consequently, a great deal of attention has been paid to the assessment of fish consumption safety (Banerjee et al, 2015;Liu et al, 2018;Yin et al, 2020;He et al, 2023).…”
