Carcass and meat quality of Karacabey Merino and Kivircik lambs under an intensive finishing system

Abstract: Carcass and meat quality traits of male and female lambs are important considerations in planning gender-based production and developing a marketing strategy for the product. Thus, the aim of this study was to determine the effects of sex on carcass and meat quality of Kivircik and Karacabey Merino lambs. Twenty male and 17 female lambs were used. Lambs were weaned at 45 days old and then fed ad libitum with concentrates and roughage until slaughter at 120 days. The study was carried out in two experiments at … Show more

“…Sex did not have an effect on LT muscle L*, a* or b* parameters. Ekiz et al, (2019a) in an assay to determine the effects of sex on carcass and meat quality of Kivircik and Karacabey Merino lambs published that differences between male and female lambs for b* and hue angle values were not significant [ 29 ]. However, LT samples of female lambs had lower L* and greater a* and chroma values than male lambs.…”

“…Meat tenderness is an important meat quality attribute in lamb as it has a massive bearing on the lamb eating quality and consumer acceptance [ 42 ]. Lamb meat with a WBSF values above 54.93 N are considered tough by consumers [ 43 ]. Using this criteria the meat produced by the lambs in this study were relatively tender with WBSF values < 40 Newtons.…”

“…Therefore, to benefit from the meat production potential of lambs, it is of great importance to determine the highest SW which will not lead to a reduction in lamb carcass and meat quality. Studies have been carried out to investigate carcass and meat quality characteristics of Kivircik lambs (Ekiz et al, 2012a;Ekiz et al, 2019a and2019b;Yalcintan et al, 2018) and Akkaraman lambs (Aksoy et al, 2018;Aksoy et al, 2019;Khadre and Karabacak, 2018) in a constant SW. However, the studies on the meat quality characteristics of Kangal Akkaraman lambs, and the carcass and meat quality characteristics at different slaughter weights for both breeds are quite limited.…”
