Catalytic Square-Wave Voltammetric Determination of Acrylamide in Potato Chips

Abstract: Square-wave voltammetry is a fast technique used for determination of trace amounts of acrylamide. When cobalt(II) ions were added to the acrylamide solution, a catalytic peak at about À1.35 V vs. Ag=AgCl was observed, which was proportional to acrylamide concentration. The calibration curve showed good linearity in the range of 200-800 ng mL À1 of acrylamide with a regression coefficient of 0.9989. The limit of detection of the method was 3.52 ng mL À1 , and the relative standard deviations for concentrations… Show more

“…The advantage of the electrochemical approach is a relatively short measuring time including sample preparation (Wang 2001). Amounts of acrylamide were measured by square-wave voltammetry in potato chips (Zargar et al 2009). Recently, a new approach to electrochemical determination of AA was published (Veselá and Šucman 2013).…”

“…Another detection principle is based on the catalysis of the reduction of AA with the assistance of electrolytes, such as LiCl and cobalt(Ⅱ) ions (Niaz et al, 2008;Zargar, Sahraie, & Khoshnam, 2009). Specifically, AA was reduced with the catalysis of the Co ion accompanied by electron transfer and finally changes in current for signal readout (Zargar et al, 2009).…”

“…Such a complex seems to be suitable for adsorptive voltammetric measurements. A similar approach was used in AA analysis by the method of squarewave voltammetry, in which the transitional metal cobalt was used (Zargar et al 2009). …”
