Changes in the structural organization of lymph nodes during short-term exposure to monosodium glutamate

Abstract: Monosodium glutamate is a common food additive that belongs to the group of flavor enhancers used in a wide range of food products. The potentially negative impact of monosodium glutamate on human health prompts us to question the safety of its widespread use. The article presents and analyzes the data of an experimental study conducted on 40 white male and female rats of reproductive age (2.5-3.5 months old) weighing 120-190 g. The purpose of the study is to study histological, morphometric, and ultrastructur… Show more

“…As a regulator of immunological and water tissue homeostasis, the lymphatic system is essential for pathogenesis and sanogenesis [ 68 , 69 , 70 , 71 ]. It reflects the morphofunctional state of the lymph nodes, which varies as a result of the inflammatory processes taking place in the lymphatic region of the organ.…”

“…MG was diluted in distilled water and 1 ml of the solution was administered orally by a syringe once daily (at 9 am) with subsequent unrestricted access to food and water. The dose of MG applied was selected on the basis of the utility patent for MG-induced obesity experimental model (Harapko et al, 2020), with the main focus on the dose to be low enough to create the possibility of results extrapolation on human population with regularly mild to moderate MG consumption. The animals from the control group were administered 1 ml of distilled water orally by a syringe once daily at approximately the same time.…”
