Abstract:Alginic acid is a polysaccharide obtained from brown algae, and its oligosaccharide has various functions such as antiviral, antitumor, immunoregulation, and antioxidant. However, because of its high viscosity, numerous studies have degraded the alginic acid by enzymes to improve its utilisation.
