Characterization and Comparison of Collagens Extracted From the Digestive Tract and Skin of a Japanese Amberjack Seriola Quinqueradiata

Abstract: Collagen was extracted from the digestive tract and skin of a Japanese amberjack (Seriola quinqueradiata) by acid extraction and limited pepsin digestion. The amounts of collagen solubilized from the digestive tract were smaller than those from the skin.
