Characterization of aroma‐active compounds in Jasminum sambac concrete by aroma extract dilution analysis and odour activity value

Abstract: Jasminum sambac is a flower and usually used in food, cosmetics or other chemical industries for its unique flavour characteristics in China. However, molecular sensory technologies have not applied to identify aroma‐active compounds in J sambac concrete. In this study, gas chromatography‐olfactometry (GC‐O), gas chromatography‐mass spectrometry and solvent‐assisted flavour evaporation were applied to isolate the odorants in three Chinese J sambac concrete (E1, E2 and E3) obtained from different companies. A t… Show more

“…OAV is calculated by the ratio of its concentration to its odour threshold, which is a common parameter in the research of aroma components. Jinglin Zhang identified the aroma‐active compounds in Jasminum sambac concrete by OAV 24 . We selected 23 aroma compounds that may cause the fishy smell of EPO for analysis, including 14 aldehydes, 5 alcohols, 1 ketone, and 3 acids, as shown in Table 2.…”

“…Research shows that real jasmine tea (scented with fresh flowers) and fake jasmine tea (scented with aromatic essential oils) can be distinguished according to the disappearance of some grass/green smells (Wang et al, 2008). Further, the herbal scent was found to be related to either the sweet or green scent Zhang, Li, et al, 2021). In the same way, the excessive amount of flowers, scenting time, and scenting temperature were not necessarily conducive to the aroma quality of jasmine tea (An et al, 2022).…”

“…The removal of methyl anthranilate and the replacement of (R)-(−)-linalool by (S)-(+)-linalool causes a major change in the odor model [5]. The aroma of jasmine flowers is associated with a mixture of linalool, benzyl benzoate, farnesyl acetate, and methyl isoeugenol [4,16], cis-3hexenyl acetate, linalyl acetate, eugenol and methyl salicylate [4]. Methyl anthranilate and (R)-(−)-linalool) are the main aroma of jasmine tea flavor [5].…”

“…The J. sambac has the most significant economic value because it has a refreshing fragrance that is widely used in various industries [3], food, cosmetics or other chemicals [4,5]. These compounds (methyl anthranilate and (R)-(−)linalool) were determined as the main aroma of jasmine tea flavor [5].…”
