Characterization of Traditional Foods and Diets in Rural Areas of Bauchi State, Nigeria: Analysis of Nutrient Components

Abstract: Objectives:  Bauchi is one of the 36 states in Nigeria, the seventh most populous country in the world. This area has the second highest prevalence of thinness among women; with unacceptably high proportions of children 0 – 5 years being stunted. Household dietary intake is believed to be an underlying factor for this nutrition situation. Determination of the nutritional composition of traditional foods is essential in order to evaluate the dietary drivers of undernutrition, and to design interventions to prom… Show more

“…In these areas, animal source foods constitute only 3% of dietary calories, and 80% of dietary energy is mostly derived from cereals [ 85 , 87 , 88 ]. In the present study, the high salience of beans (the third-highest and highest on the “preferred’ and “perceived as nourishing” free lists, respectively) is a positive result, as it would make nutrition interventions advocating affordable cereal–legume mixes easily acceptable in this population [ 89 ]. Conversely, the preference of the study participants for ultra-processed foods is consistent with the evidence of the nutrition transition in rural populations [ 90 ].…”

“…Conversely, the preference of the study participants for ultra-processed foods is consistent with the evidence of the nutrition transition in rural populations [ 90 ]. In order to mitigate these dietary shifts, which are often associated with the marketing of highly processed foods to adolescents [ 91 ], the consumption of traditional foods that are nutritious, affordable, and available in the study area should be promoted [ 89 ].…”
