Capsicum peppers is one of the most important vegetables, with a well known nutritional properties, including phenolics. Breeding peppers adapted to organic agriculture and rich in bioactive compounds is of paramount importance for this sector since the demand of organic and healthy food is increasing in many countries. This is a preliminary study on the effect of genotype, growing conditions and their interaction on the main phenolics of peppers. Fruits from four Capsicum annuum (BGV-10582, Bierzo, Bola and Piquillo) and one C. chinense (ECU-994) accessions, were cultivated under organic and conventional practices and main phenolic compounds quercetin and luteolin were analysed by high performance liquid chromatography (HPLC). Differences were found among accessions for both compounds in the studied accessions, particularly ECU-994. Differences for each phenolic compound were also detected between growing systems. Moreover, considerable interaction between genotype and growing conditions was found, suggesting that there are ample opportunities for selecting peppers with high content in phenolics and specifically adapted to organic cultivation.

Sodium glutamate or monosodium glutamate is a substance found naturally in certain foods, but it is a compound used in the food industry to enhance the flavor. The compound is a non-essential amino acid, which is contained in tomatoes, milk, mushrooms, fish or cheese. In the food industry, sodium glutamate is also known as MSG or E621. Its role is to enhance the flavor of the dishes, as it has the chemical ability to enhance the flavor. In fact, MSG itself has no taste, but it is activated when it is combined with spices or flavored foods.

Biochemistry is a modern frontier science with an interdisciplinary character. Biochemistry has close links with organic chemistry, which provides support for knowing the structure and properties of biomolecules. Analytical chemistry, colloidal chemistry and chelates complexes provide biochemistry with methods of identifying, separating and characterizing biomolecules as well as kinetic and thermodynamic interpretation of biochemical reactions. Biochemical processes are carried out at cellular structures, so biochemistry interferes with molecular biology first and with morphology, which can also be approached from the aspect of structural element chemistry. Physiology raises a higher level of knowledge of the laws of life phenomena, and modern genetics has in fact become biochemical genetics, because it has created the basis for the codification of the hereditary message and has established relations between nucleic acids and protein biosynthesis as a premise of self-reproduction of living organisms.
