“…In fact, the presence of phytochemicals, in addition to vitamins and provitamins, has been considered of great nutritional interest in the prevention of chronic diseases, such as cancer, arteriosclerosis, nephritis, diabetes mellitus, rheumatism, ischemic and cardiovascular diseases and also in the aging process, in which oxidants or free radicals are involved (Chu et al, 2002;Pulido et al, 2000;Behl and Moosmann, 2002).
