Classification of Honey Powder Composition by FTIR Spectroscopy Coupled with Chemometric Analysis

Abstract: Fourier transform infrared spectroscopy (FTIR) in connection with chemometric analysis were used as a fast and direct approach to classify spray dried honey powder compositions in terms of honey content, the type of diluent (water or skim milk), and carrier (maltodextrin or skim milk powder) used for the preparation of feed solutions before spray drying. Eleven variants of honey powders containing different amounts of honey, the type of carrier, and the diluent were investigated and compared to pure honey and … Show more

“…Many studies have combined FTIR with chemometric methods, for instance Matwijczuk et al 41 . applied FTIR with chemometrics including PCA to determine similarities and differentiate between dragonhead oil stored at different conditions, and Matwijczuk et al 42 . classified spray‐dried honey powder compositions using this approach.…”

“…In this research, a highly acceptable result (60.9%) was noted for purple carrot juice concentrate powder (PC/DASD) with no additional carrier, as a result of decreased drying temperature and stickiness, possibly due to the application of dehumidified air. Dehumidified air-assisted spray drying has also been recently applied for honey [Matwijczuk et al, 2022] and sour cherry juice concentrate [Barańska et al, 2023]. For this type of materials, it also showed significant improvement in carrier content reduction (from 50% to 30% solids) but not its complete elimination.…”

“…Principal components analysis (PCA) was performed in order to obtain an overview of the similarities and differences between all the studied berry extracts [ 15 , 16 ]. Therefore, we investigated the relationship between the antioxidant activity, content of bioactive compounds, ozonation time and different storage methods (refrigerated storage) for two different cultivars of raspberries and strawberries.…”

“…Infrared techniques provide valuable, quick, and non-destructive means of examining changes in important molecules and structures within unaltered food samples [ 11 ]. Recently, many studies have paid particular attention to the possibility of measuring the quality, chemical composition and authentication of various food products, using FTIR spectroscopy coupled with chemometric analysis [ 12 , 13 , 14 , 15 , 16 ]. The interest in this method is essentially due to the rapidity of the method, the possibility of determining several quality traits simultaneously and the ease of implementation.…”
