Combined Effect of Chitosan Coating and Laurel Essential Oil (Laurus nobilis) on the Microbiological, Chemical, and Sensory Attributes of Water Buffalo Meat

Abstract: The combined effect of chitosan coating (CHI) and laurel essential oil (LEO) on the shelf-life extension of water buffalo meat stored under aerobic packaging conditions at 4 °C was investigated. Microbiological, physicochemical, and sensory attributes were monitored over an 18-day storage period. Microbiological data indicated that the (CHI) coating along with (LEO) was the most efficient among treatments in reducing populations of bacteria by 3.2 log cfu/g on day 6 of storage (p < 0.05). pH values of meat … Show more

“…The water buffalo meat was coated with a combination of chitosan and laurel essential oil and packed in aerobic conditions and stored at 4°C to study the shelf life. The results of the microbial and sensory analysis showed improved shelf life in the sample coated with chitosan and laurel essential oil up to 14 days as compared to the untreated sample which shows only a 5-6 days shelf life (Karakosta et al, 2022). Flavonoids, known for their antioxidant properties, are present in extracts of laurel and sage.…”

“…This sensitivity may develop at a young age as a result of continuous usage of cosmetics. Because citrus is a chemical that is frequently used in the fragrance industry, people who have a positive reaction to a fragrance combination ought to be tested for its presence [205] [206] [207].…”
