Comparative Consumer and Physicochemical Analysis of Del Monte Hawai`i Gold and Smooth Cayenne Pineapple Cultivars

Abstract: Del Monte Hawai`i Gold (Del Monte Fresh Produce [Hawai`i], Inc., Honolulu, HI), an experimental hybrid clone of Smooth Cayenne pineapple, was found to have significantly higher (P < 0.0001) pH, °Brix/acid ratio, yellow color, total carotenoid content and vitamin C than Smooth Cayenne, while the titratable acidity of Smooth Cayenne was significantly higher (P < 0.0001). Hawai`i consumers also significantly liked and preferred Del Monte Hawai`i Gold more than Smooth Cayenne pineapples when presented in three dif… Show more

“…However, the same author found L * value of 60.20 for Imperial cultivar, indicating that this cultivar is the darkest among cultivars, while in the present study, this variety had the highest L * value (77.79), proving to be the clearest cultivar. Ramsaroop and Saulo (2007) observed lower values not only for the brightness of Smooth Cayenne fruits (46.2), but also for parameter b * (15.5).…”

“…Viana et al (2013) quantified only the total carotenoid content, and for Imperial cultivar, the content found was 266 µg / 100 g, while Smooth Cayenne, Pérola and Vitória cultivars showed lower concentrations, respectively, 2.34; 0.69 and 0.32 µg / 100g. Ramsaroop and Saulo (2007) also investigated the total carotenoid content for Smooth Cayenne and hybrid cultivars, finding concentrations of 45.43 and 136.26 µg / 100g, respectively. This hybrid cultivar obtained greater acceptance due to its lower acidity and more yellow color, which is consistent with the total carotenoid content and also with the quantification of β-carotene, which showed 41.59 mg / 100g, against 17.22 g / 100g of Smooth Cayenne cultivar.…”

“…Only the TTA and TSS did not showed significant differences at the Chi-square test. These traits are important because the titratable acidity is related to [12]. Despite the fact that these traits did not showed to be different among the clones evaluated, according to [2] there are differences between the Turiaçu pineapple and other commercial cultivars.…”
