Comparing Taste Detection Thresholds across Individuals Following Vegan, Vegetarian, or Omnivore Diets

Abstract: Taste perception plays an undisputed role in food choice, preference, and intake. Recent literature suggests that individual diet and taste sensitivity may have a reciprocal relationship, with evidence highlighting that specific diets can alter taste sensitivities. Commensurate with an increase in the prevalence of plant-based diets is the importance of investigating if following a vegetarian or vegan diet is associated with altered taste sensitivities. In this study, the taste detection thresholds for six com… Show more

“…Interestingly, current dieting and a vegan diet were positively associated with taste perception of differential taste qualities, suggesting that diet per se impacts taste perception. This is in line with previous findings showing that a vegetarian diet is associated with an increased sensitivity towards bitter taste as compared with other diets 33 . Moreover it was shown that metabolic syndrome is associated with salty taste perception and that a lower sensitivity to salty taste is associated with a Mediterranean diet 34 .…”

“…This is in line with previous findings showing that a vegetarian diet is associated with an increased sensitivity towards bitter taste as compared with other diets. 33 Moreover it was shown that metabolic syndrome is associated with salty taste perception and that a lower sensitivity to salty taste is associated with a Mediterranean diet. 34 Beside the basic taste qualities, a study by Liu et al showed that the consumption of a low-fat diet decreased the threshold for detection of oleaic acid in lean subjects, while no change in obese individuals was shown.…”

“…Such observations are in line with the sensory compensation effect, which had been proposed by Bartoshuk,Duffy [78] to describe how individuals with high sensitivity to a specific tastant have relatively low preference for foods with congruent tastes. This effect had been demonstrated in various studies based on different measures of sensitivities (e.g., [41][42][43]79]). Notably, a few studies that used detection thresholds did not observe such a relationship [80,81].…”
