Comparison between Fermentation and Ultrasound-Assisted Extraction: Which Is the Most Efficient Method to Obtain Antioxidant Polyphenols from Sambucus nigra and Punica granatum Fruits?

Abstract: Fruit extracts of Sambucus nigra L. (elderberry) and Punica granatum L. (pomegranate) have several applications in nutraceutical, cosmetics, and pharmaceutical industries thanks to their richness in antioxidant polyphenols, whose composition changes with the extraction method applied. We aimed to compare the efficiency of the fermentation extraction, recently applied by industries, with the ultrasound-assisted extraction–UAE, a well-known and efficient technique, on the yield of antioxidant polyphenols from el… Show more

“…During the solid-phase fermentation of fireweed leaves, compounds that are composed of multiple molecules are broken down into simpler ones and some substances transform, resulting in qualitative and quantitative changes. The use of fermentation as an extraction method can increase the content of bioactive compounds, and also induce chemical changes in the original molecules [14][15][16].…”

“…The end product was mashed to become powder using mortar. The fermentation powder was soaked in ethanol 70% 1:20 and extracted using ultra-assisted extraction (UAE) for 30 min at 50 °C ( Nascimento et al, 2021 ). After extraction, the plant’s extracts were processed in a rotary evaporator at 50 °C.…”

“…(13) The fermented products were further ground into simplicia powder after being dried for five days at 60 o C in a hot oven, and then extracted using the ultra-assisted extraction (UAE) method. (14) Following extraction, the plant extract was treated at 50 o C in a rotary evaporator to produce extract concentrate. Then the extract was dried at 50 o C in a hot oven until the mass settled.…”
