Abstract:This study approached the consumer preference and characteristics of eggs from various categories sold at supermarkets in Rio de Janeiro. The study was performed in three phases. In the first one, 180 'caipira' eggs were randomly acquired from three supermarkets considering the consumers’ socioeconomic profile (middle, upper, and lower class).
