Correlation between Some Nutritional Components and the Total Antioxidant Capacity Measured with Six Different Assays in Eight Horticultural Crops

Abstract: The contents of antioxidant nutritional compounds, total soluble phenolics (TSP), vitamin C, vitamin E, beta-carotene, and total carotenoids (TC), were correlated with the total antioxidant capacity (AOC) of hydrophilic (HPE) and lipophilic extracts (LPE) from eight horticultural crops, namely, guava, avocado, black sapote, mango, papaya, prickly pear fruit, cladodes, and strawberry. AOC was measured using six different assays: 2,2'-diphenyl-1-picrylhydrazyl (DPPH), N,N-dimethyl-p-phenylendiamine (DMPD), ferri… Show more

“…Vitamina C. El ácido L-dehidro ascórbico presenta actividad biológica y puede ser convertido fácilmente a ácido L-ascórbico por los humanos, la suma de ácido ascórbico y L-dehidro ascórbico se toma como el contenido de vitamina C (Corral-Aguayo et al, 2008). El contenido de ácido ascórbico y dehidro ascórbico disminuyo en las hojas de los árboles conforme aumenta la altura (Cuadro 3).…”

“…Vitamin C. L-dehydro ascorbic acid shows biological activity and can be easily converted to L-ascorbic acid by humans, the amount of ascorbic acid and L-dehydro ascorbic is taken as the content of vitamin C (Corral-Aguayo et al, 2008). The content of ascorbic acid and dehydro ascorbic decreased in the leaves of trees as height increases (Table 3).…”

“…Furthermore, these beverages reduced the risk of anaemia and iron deficiency anaemia in pregnant women and infants (Makola et al, 2003;Nnam, 2009). Some fruits or vegetables (nopalito-tender cactus, guava, papaya, mango, strawberry, prickly pear and others) grown in Mexico have been considered appropriate owing to their antioxidant properties (Corral-Aguayo et al, 2008). Additionally, in the arid and semiarid lands of Mexico, the pulp of a plant known as maguey manso (Agave salmiana, Gentry) is used as forage, while aguamiel (its sap) is collected in order to produce the alcoholic beverage known as pulque.…”
