Critical points of Brazil nuts: a beginning for food safety, quality control and Amazon sustainability

Abstract: This study has shown the main issues related to the process design of Brazil nuts, supporting the necessity for research on new strategies to improve the quality of nuts. Also, the habit of eating Brazil nuts stored throughout the year may represent a risk to farmers.

“…Many other commodities have been studied for the effect of damage on fungal/mycotoxin contamination (Dohlman., 2003; Filazi & Sireli., 2013; Kumar et al., 2017; Lima et al., 2013; Mahato et al., 2019) and the current study also shows this in chilies.…”

“…However, a single pistachio nut with an aflatoxin concentration of 60 000 ppb can contaminate approximately 3000 pistachios at a USFDA action level of 20 ppb. Following harvest, the mechanical and biochemical defence mechanisms of nuts against fungal attack decreases and therefore fungal infection may increase and subsequently result in mycotoxin production during the post‐harvest period …”

“…As Brazil nut is an extractivist crop, with aflatoxigenic species occurring throughout the production chain [32,37], safe production is dependent upon identification of CCPs and subsequent implementation of detection methods at these points. The mitochondrial genome is an attractive molecule for application in fungal taxonomy and systematics, with a rapid rate of evolution and limited genetic recombination [38,39].…”

“…PCR-based molecular diagnosis of microorganisms offers specificity and sensitivity appropriate for early detection, appropriate for both HACCP purposes [ 36 ] and implementation of countermeasures for control of microbial contamination. As Brazil nut is an extractivist crop, with aflatoxigenic species occurring throughout the production chain [ 32 , 37 ], safe production is dependent upon identification of CCPs and subsequent implementation of detection methods at these points. The mitochondrial genome is an attractive molecule for application in fungal taxonomy and systematics, with a rapid rate of evolution and limited genetic recombination [ 38 , 39 ].…”
