Abstract: Tannase (EC 3.1.1.20, Tannin acyl hydrolase) is an extracellular enzyme that hydrolyzes the ester bond of hydrolyzable tannin (e.g., tannic acid) or esters of gallic acid (e.g., epigallocatechin-3-gallate, [EGCG]) into galloyl ester, gallic acid, and glucose as products (Lekshmi et al., 2021).
