The article aims to reveal the specifics of the alimentary culture in the Russian part of the Caspian region on the example of the Astrakhan region, that was formed under the influence of various ethnic groups living on its territory. Another objective of the article is to determine the actual state of the alimentary culture in the region. The special attention was paid to the aspects of food production and procurement because traditionally the main part of the food products consumed by the society is produced on the territory where this society lives. Due to this fact some special cultural environment which we defined as “alimentary landscape” was being formed in certain regions. Alimentary landscape of the region made a long way of formation and transformation from a traditional culture to new sociocultural practices under the influence of objective and subjective factors. The objective factors include natural and climatic characteristics of the region, the subjective ones include multiculturalism and polyethnicity of the region. It can be affirmed that many regional food practices have been preserved up to nowadays, being slightly transformed under the influence of various factors.

Purpose: Review the experience, principles and parameters of the sturgeon assessment quality by anomalies in early ontogeny. Results: Maintaining the number of sturgeon fish in the transboundary Caspian Sea is provided by five states (Russia, Iran, Azerbaijan, Turkmenistan, Kazakhstan) at 16 Sturgeon hatcheries, where their artificial reproduction is carried out. FAO recognizes Russia’s leadership in creating the basic technology for the sturgeon artificial reproduction, but the other four Caspian states also make a significant contribution to its modern optimizations. There is almost a century of tradition behind the technological development of artificial reproduction in sturgeons. During the artificial reproduction of sturgeons, anomalies in the structure and functions may occur, such as deformities, defects in organs and tissues, edema, hematomas, etc. The sturgeon anomalies classification is based on structural and functional principles. Identification of anomalies is carried out on the basis of a previously created classification, divided into nine large classes. Identification of sturgeon anomalies during the period of their artificial reproduction makes it possible to clarify the real value of replenishment of their stock. Methods: Analysis of professional scientific literature and practical guides. Conclusions: The presence and number of Sturgeon anomalies make it possible to determine their death percentage to calculate the real number of replenishment of the Caspian Sturgeon stock.

The article contains results of the research on the influence of "Sporothermin" probiotics and "Chiktonik" vitamin-amino acid complex on the processes of free-radical oxidation of lipids in the muscle tissue of fish. Three groups of sexually mature African catfish were formed. The first test group received "Sporothermin" probiotic at a dose of 2 g / kg of feed. The second group received "Chiktonik" vitamin-amino acid complex at a dose of 2 ml / kg of feed, the third group was the control and received only LimKorm "Som" brand feeds. All groups were tested for malondialdehyde content (MDA) in three months. In the control group, the content of MDA of males was 7948.71 mmol / 100 g of tissue, females - 8119.65 mmol / 100 g of tissue. Fish reared with the probiotics had the lowest levels of lipid peroxidation. Males had the MDA level of 3931.62 mmol / 100 g of tissue, and females - 4273.5 mmol / 100 g of tissue. As for the second group, which received “Chiktonik” vitamin-amino acid complex, the MDA content was lower than in the control, but higher than in the group which received the probiotics and was 4358.97 mmol / 100 g of tissue (males), and 4957.26 mmol / 100 g of tissue (females). It can be concluded that the usage of "Sporothermin" probiotics and "Chiktonik" vitamin-amino acid complex in the diet of African sharptooth catfish leads to a decrease of free radical processes, reduces the activity of lipid peroxidation, stimulates the antioxidant system, provides resistance to oxidative stress, revitalizing and increasing the vitality of the organism fish.
